Hi I was lucky enough to get a copy of your new book and have been fascinated by your previous books,however I do have one question that I hope you can answer for me. I was wondering how your cupcake liners always look so neat and bright. Do you bake in the same liners, or do you change them out. Thank you for all your great tips.

Hi Josie,
What a great question. We do use a very sturdy cupcake liner. We love the foil lined liners made by Reynolds. The inside is foil and the outside is decorated with lovely patterns or gorgeous solid colors. We also use the high quality paper liners from Confectionery House (www.confectioneryhouse.com). They are nice and thick and don't have any show-through after you bake the cupcake. That said, we also treat our cupcakes like a newborn baby, i.e. handle with care. The last thing you want to do with your delicious but tender cupcakes is to over-handle them. It is easy to get a little tense when you are trying to make a perfect decoration on your treat, but try to handle the cupcake with gentle loving care. That means leaving it on the counter or on a raised work platform while decorating them, rather than squeezed in a tight grip on their fragile little bottoms.
