All-American Cupcakes

Summer is that time of year when we love to get together and share a good cupcake. And lots of our favorite summer cupcakes have patriotic themes. A couple of our reader's sent their latest All-American creations to share with you.




Jeannine sent us this fabulous American Bald Eagle. She wrote:

Hi Alan (and Karen),
Glad you like. I used the general template for the aliens for the body shape and the grunt's banana for the nose, mini yellow m&ms for the eyes and made templates for the wings and shield. The stripes on the shield were red and blue glitter gel from Wilton.

    what brand did you use for the strawberry pirouette cookies on the big birthday cake on pg 109? I can't find this type of cookie in my local grocery stores so I would like the actual brand name so i can google it re possible mail order.

      Hope we are in time to help you with this. That brand was an import and we really regret that it has been discontinued. We have found one other brand with a strawberry stripe on line and it looks really pretty although less pink than the ones we used. They are Pirouline Strawberry Cream de Pirouline, Cream Filled Wafer Rolls. But with so many snacks and candies out there you can always find a solution close at hand. First you could use a different snack. Maybe use Rainbow Twizzlers cut to candle size and insert a thin pretzel up into the opening to make them rigid, leaving about 1 inch of the pretzel exposed at the bottom to push into the cupcakes. Then place the flames on top. Likewise you could use those striped Candy Sticks that come in all those great colors. They are usually found in bulk jars at candy stores and you could mix and match the colors for a fun palette. If you really want the pirouette cookies and don't have time to order on line then I would use the vanilla Pirouette from Pepperidge Farms available at most groceries and add your own stripe to it. Do this by first dipping the pirouette cookies in melted white chocolate and place them on a wire rack to harden. Next melt a contrasting color of melting wafers (red, pink, blue, or yellow) in a ziplock bag (you will find instructions for this on page 16 and 17 of Hello, Cupcake!), snip a very smalll corner from the bag and using a back and forth motion, drizzle each cookie with a diagonal line from bottom to top. The drizzle will wrap around about 3/4 of the cookie and will look like a thin stripe running up the candle. Position the back portion that was against the wire rack out of site toward the inside of the birthday cake. I hope that helps and tell the lucky celebrant happy birthday from us.

    I love the cupcakes in your book. I made the penguins for my kids' birthday last year. I have to say though that finding the supplies is torture (even with your suppliers list) and often times I can find the items in less than large bulk quantities.

      Some stores like Party City have bins of sorted candies in the store so it is easy to get just the candy you need. I know Central Market grocery stores also have them. I have been told Frye's does too. Look for a store with bulk bins or make a candy swap. That's what we call it when you take the design idea and swap out the candy for the ones you like or can find. Don't feel stuck by the specific candy we use, let your imagination lead you to colors and shapes that work for you. Any bright color or shape would make a perfect design on the cake.

      Try placing the mini cupcake head closer to the center of the standard cupcake underneath. If you place it too close to the edge the weight might make it slide off. Also be sure you have a good size dollop of frosting glueing the mini cupcake in place. Lastly you could also use a pretzel stick to secure the mini cupcake in place (we avoid toothpicks and stick to edible snacks for this). Just wait till you are ready to serve and then push the pretzel into the standard cupcake on the bottom and then add the mini cupcake head to the top of the pretzel (don't do this too long before serving or the pretzel might soften too much to hold them together). Hope that helps.
