The Sprinkles are in the Closet!
Karen, I am a frequent visitor to the cupcakes take the cake blog... I saw the posting with the picture of you - which is also posted on your website as I have discovered. May I ask: where are you shopping in that picture? It looks like the biggest sprinkles assortment I have ever seen! I am a big fan of your book and I enjoyed your segment on Martha. Thank you very much, Anne ![]() ![]() Dear Anne, We are actually shopping at the cheapest sprinkle store in town. The huge armoire in Karen's dining room. It is about eight feet tall, five feet wide, and is filled top to bottom with sprinkles, organized, mostly neatly, by color and texture. That armoire is like the Library of Congress of Sprinkles. You can have any color sprinkle that your heart desires in less than an hour. Just keep a supply of the plain, no color, sprinkle sugar on hand and your cake decorator's food dye. You have only to work in a little of the coloring and give the sprinkles a little time to dry and you're good to go. While the paste is more efficient you can even use liquid food dyes but you will have to let the sugar dry out a little longer. You can have any shade and any amount that you need.

We couldn't have said it better. We usually spread the sugar out on a baking sheet to make it easy to blend the color evenly, and then place it out of the way on a rack in the oven to dry (no need to heat the oven, the sugar will air dry on it's own). And you are right, the paste coloring will give a richer color, but the liquid food coloring works just as well for softer hues.
